1 medium banana, peeled and cut in thirds

1) Combine the spinach, romaine and water in a blender and begin processing on low. Gradually move to higher speeds and blend until smooth.

Red Layer:

¾ cup frozen strawberries
½ frozen banana
¼ cup chopped raw red beets
½ cup coconut water ice cubes
½ Tbs. coconut nectar (if desired not required)

Blue Layer:

½ cup frozen blueberries
½ cup coconut water ice cubes
½ cup fresh blueberries

White Layer:

1 frozen banana
½ fresh banana
1 cup coconut milk

1 Tbs large flaked coconut
¾ cup coconut milk ice cubes
Garnish: sliced strawberries, coconut whipped cream or shredded coconut


1) Assemble each smoothie. Chill each smoothie in a bag or freezer safe container in the freezer for 2 hours. Mash up each smoothie to a smooth consistency.
2) Using frosted glasses begin assembling the smoothies.
3) Place enough red smoothie in each glass to fill ⅓ of the glass.
4) Next, pour another ⅓ full amount of blue smoothie mix in each glass.

Mint Layer

3 frozen bananas
1 large handful spinach
1/2 tsp mint extract
1 cup non-dairy milk I used coconut milk

Chocolate Layer

2 frozen bananas
1 cup frozen cauliflower
2 tbsp cacao powder
1 cup non-dairy milk


1/2 cup chocolate chips
Coconut whipped cream
Chocolate shavings and mint leaves to garnish


1) Melt the chocolate chips. Dip the rim of your jars/glasses into the melted chocolate and use a spoon to drizzle/drip more around the top.
2) Coat the spoon in chocolate and shake it in the bottom of the jar to create the small chocolate splatters. Freeze for 5 minutes.
3) Blend each smoothie layer separately until very creamy.
4) Layer into the decorated jars/glasses. Top with coconut whipped cream, shaved chocolate, and mint leaf.

Ingredients For the Home-Made Pistachio Milk:

1 cup of pistachio nuts, soaked for 2 hours
3 cups of water
1 date, pit removed
1 tiny pinch of salt

Ingredients For The Smoothie:

2 cups of pistachio milk
1/2 avocado
1 date, pitted
1 banana
1 cup/handful of seasonal greens such as baby spinach
1 teaspoon spirulia or wheatgrass powder (optional)


1) Soak the pistachio nuts in filtered water for at least 2 hours or overnight. When they are ready, strain them and place them in a high speed blender, together with the date, salt and water, then blitz until smoothie.
2) Strain the mixture through a cheese cloth or muslin cloth. Save the pulp in a container in your freezer for future baking.
3) Then measure out 2 cups of pistachio milk and place in a high speed blender together with the avocado, pitted date, banana, spinach and spirulina/wheatgrass powder if using. Blend until nice and smooth. Enjoy!
